Yummy clean banana bread! (unless you add a sneaky bit of chocolate like I did).
Ingredients
.4 very ripe bananas, mashed
.1/2 C coconut flour
.1tsp bicarbonate soda
.1 tbs maple syrup
.4 eggs
.1/3 C organic butter, melted (or coconut oil)
.Cinnamon
.Nutmeg
.Pinch salt
I added 1/2 a block of 70% cocoa Lindt chocolate, chopped. You can buy raw organic chocolate and use that. Or you could use nuts or dates, or just have it plain :)
Combine all ingredients and mix. Pour into lined bread tin and bake at 180 degrees Celsius, for 45-55 mins, or until knife comes out clean.

It is so good! Heaps better than the last one – there’s not as much coconut flour so its not as coarse :)
Would it work to substitute another grain flour for coconut flour, i.e.. a gluten free flour?
Yeah I can’t see why not. I would certainly give it a go :)
This looks fantastic and I’m definitely going to give it a try, do you think it’s possible to sub honey for the maple syrup?
Yeah absolutely! Should work fine :)
You can make yummy pancakes with this too! Just cook them small and patiently on med-low.
