We had my parents over for dinner the other night, and I was racking my brain trying to come up with a paleo desert, last minute with what I already had. I started throwing some things together, and voila! I ended up with little caramel banana tarts.
Here is the recipe! :)
Makes approx 4
Base:
1C macadamia/walnuts
5 medjool dates
1tsp coconut oil
Blend all the ingredients until you can press between your fingertips and it holds together. Line a muffin tray with 4 muffin papers, spread mixture between them and press tight into the base of the papers.
Banana layer:
2 medium bananas, frozen
2 tbsp shredded coconut
Blend together, add water as needed to get the mixture to a creamy (but thick) consistency. Spread over base and put in freezer to set.
Caramel layer:
1/2 avocado
1/3C cashews
3 tbsp nut butter
2-3tbsp maple syrup
2 medjool dates
Blend all ingredients together. You can add more maple syrup to make it sweeter or a bit runnier if it’s too thick. It’s already pretty sweet though! Spread over banana layer and put in freezer to set.
Top with berries or drizzle with melted chocolate. Remove them from the papers, and put in the fridge an hour or so before eating so that they soften up a bit.
This looks so yummy! My friends would even eat this, and they hate raw. Could you drop by with a few? ;P
