One of my favourite little snacks that satisfies my sweet tooth are Balls Of Joy. They are exactly as they sound – balls of goodness that bring joy to your day! It all started when my good friend over at Self•Health•Wellness let me in on her recipe for her delightful little chocolatey balls. Balls of joy are really just a jazzed up version of those.
Recipe
2C walnuts/cashews/almonds
1/4C cocoa
1-1 1/2C dates (the moister the better)
These 3 form the base mix for the chocolate balls. Stick in a processor/powerful blender and whizz away.
To spice it up a bit you can add any of the following;
- Gogi berries
- Cocoa nibs
- Shredded coconut
- Coconut butter
- Dried fruits
Blend all the ingredients to a consistency that will hold together when squeezed. Take a big teaspoon of the mixture and roll into a ball. You can leave it as is, or you could also roll the ball in dedicated/shredded coconut or cocoa powder.
Too dry? add: water/coconut oil/nut butter/melted coconut butter/coconut water/more dates
Too wet? add: nuts/coconut/cocoa
…be creative. Mine have never turned out the same, and that is one of the things that makes them that much more exciting!
Next time your sweet tooth is out for a binge, whip up a batch of these and enjoy with a cup of tea :)
